Works well with all methods; however, we recommend brewing as espresso, Moka Pot, or cafetière for best results. The coffee presents a medium sharpish body with an overwhelming taste of chocolate and molasses with hints of satsuma, similar in taste to a piece of Terry’s Chocolate Orange. In the aroma, there are notes of dark chocolate and orange oil.
Fazenda Cubica is a 409-hectare farm located in the Carmo de Cachoeira in the south of Minas – a region where coffee has been cultivated for over 200 years. Owned by the Paiva family, coffee is planted on 172-hectares, and 20% of the farm is left untouched to protect the environment and native flora and fauna.
When the cherries are ripe, they are harvested with a mechanical picker. The coffee is then floated to remove any dirt and unripe cherries. It is then left to dry on patios with the skin on for 7-10 days,
before being stored in silos to rest as parchment and then milled and prepared for export.
As a natural casing, the fruit allows fermentation, and microbes modify proteins, carbohydrates, and chlorogenic acids. Ultimately, more precursors to aromatic compounds are created in natural coffees, resulting in fruity and caramel notes.
